- 2 large ripe avocados
- 1 can (5 oz) tuna packed in water, drained
- 1/4 cup finely chopped red onion
- 1/4 cup finely diced celery
- 2 tablespoons mayonnaise (or Greek yogurt for a lighter option)
- 1 tablespoon freshly squeezed lemon juice
- 1 teaspoon Dijon mustard
- Salt and freshly ground black pepper, to taste
- 1 tablespoon chopped fresh parsley or dill (optional, but adds brightness)
- Pinch of smoked paprika (optional, for a subtle warmth)
If you’re looking to add a little crunch, a handful of chopped toasted walnuts or sliced almonds can be a lovely addition. For a dairy-free version, simply swap the mayonnaise for your favorite vegan mayo or mashed avocado mixed with a bit of lime juice.
Instructions
- Cut the avocados in half lengthwise and carefully remove the pits. If the avocado isn’t perfectly ripe, it might be tricky, so I always choose ones that yield slightly to gentle pressure.
- Using a spoon, scoop out about half an inch of the flesh around the pit cavity to create a larger well for the tuna filling. Reserve this extra avocado for the salad.
- In a medium bowl, combine the drained tuna, finely chopped red onion, celery, and the reserved avocado flesh.
- Add mayonnaise (or Greek yogurt), lemon juice, and Dijon mustard to the tuna mixture. Stir gently until everything is combined but still chunky.
- Season with salt, pepper, and smoked paprika if using. Fold in chopped parsley or dill for that fresh, herby note.
- Spoon the tuna mixture generously into each avocado half, mounding it slightly.
- If you want to add a garnish, sprinkle with a few extra fresh herbs or a dash of paprika for color.
- Serve immediately or chill for 15-20 minutes in the refrigerator to let the flavors meld together.
