If you’re looking for a dairy-free version, substitute the butter with an equal amount of coconut oil or vegan butter. For a touch of heat, a pinch of smoked paprika can add a lovely depth to the onions, reminiscent of some of Mama Lou’s more adventurous dishes.

Instructions

  1. Begin by peeling the onions and slicing them thinly into uniform rings or half-moons. Mama Lou always said, “Even slices cook evenly, sweetheart!”
  2. In a large skillet, heat the butter and olive oil over medium-low heat until the butter is melted and fragrant.
  3. Add the sliced onions to the pan, stirring gently to coat them with the butter and oil mixture.
  4. Sprinkle the kosher salt and freshly ground black pepper over the onions. This helps draw out moisture and enhances their natural sweetness.
  5. Cook the onions slowly, stirring every 5 minutes. Patience is key here—Mama Lou’s secret was always low and slow. The onions will soften and gradually turn a rich golden brown. This process takes about 30 to 40 minutes.
  6. When the onions start to caramelize, sprinkle the brown sugar evenly across the pan and stir well to combine. This step is optional but adds a lovely depth of flavor.
  7. Once the onions are beautifully caramelized, pour in the apple cider vinegar or balsamic vinegar, and the water or broth to deglaze the pan. Scrape any browned bits from the bottom with your wooden spoon. This adds a tangy brightness that balances the sweetness perfectly.
  8. Simmer for another 3 to 5 minutes until the liquid reduces and the onions become tender and glossy.
