  • 3 ears fresh corn, husked (or 2 cups frozen corn kernels, thawed)
  • 1/3 cup mayonnaise (use Greek yogurt as a lighter substitute)
  • 1/4 cup crumbled cotija cheese (feta can work if cotija is unavailable)
  • 1 tablespoon freshly squeezed lime juice
  • 1 small jalapeño, finely chopped (optional, for a little heat)
  • 2 tablespoons fresh cilantro, chopped
  • 1 teaspoon chili powder (for sprinkling)
  • 1 lime, cut into wedges, for serving

Instructions

  1. Preheat your grill or grill pan to medium-high heat. If using an oven, set it to 400°F and prepare a baking sheet lined with foil.
  2. In a small bowl, combine smoked paprika, cumin, garlic powder, salt, and pepper. Rub this spice mix evenly over both sides of the chicken breasts.
  3. Brush the grill grates with olive oil to prevent sticking. Grill the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F. If using the oven, bake for 20-25 minutes.
  4. While the chicken cooks, place the corn directly over the grill grates (or use a grill pan). Turn occasionally until the kernels are charred in spots, about 8-10 minutes. If using an oven, spread corn on the baking sheet and roast for 15 minutes, stirring halfway through.
  5. Remove the charred corn from the cob by slicing kernels off with a sharp knife. In a medium bowl, mix the corn with mayonnaise, lime juice, jalapeño, cilantro, cotija cheese, and a pinch of chili powder. Taste and adjust seasoning as needed.
  6. Once the chicken is cooked through, let it rest for 5 minutes. Then spoon generous amounts of the street corn mixture over each piece, allowing the creamy, tangy topping to mingle with the smoky chicken.
