Ingredients
- 4 ripe bananas, sliced
- 1 cup granulated sugar, divided
- 1/2 cup unsalted butter, melted
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup whole milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon (optional, but highly recommended)
- Juice of half a lemon (to prevent bananas from browning)
If you’re looking for substitutions, feel free to swap whole milk for almond or oat milk to lighten the dish, or use coconut oil instead of butter for a subtle tropical twist. For a gluten-free version, a 1:1 gluten-free flour blend works beautifully—Mama Lou always said, “Good food adapts to the hands that make it.”
Instructions
- Preheat your oven to 350°F (175°C). Lightly grease a 9×9-inch baking dish with butter or non-stick spray.
- In a medium bowl, toss the sliced bananas with the lemon juice and 1/2 cup of the granulated sugar. This keeps the bananas bright and fresh while adding a touch of sweetness.
- Pour the bananas into the prepared baking dish, spreading them evenly.
- In a separate large bowl, whisk together the flour, baking powder, salt, cinnamon, and remaining 1/2 cup sugar.
- Add the milk, melted butter, and vanilla extract to the dry ingredients. Stir gently until just combined—do not overmix. The batter will be slightly thick but pourable.
- Pour the batter evenly over the bananas in the baking dish. It might seem thin, but as it bakes, it puffs up into a tender biscuit topping.
- Bake in the preheated oven for 45-50 minutes, or until the cobbler is golden brown on top and a toothpick inserted in the center comes out clean.
- Remove from the oven and let cool for about 10 minutes before serving. The cobbler will set slightly, making it easier to scoop.
- Serve warm, ideally with a generous scoop of vanilla ice cream or a drizzle of heavy cream.
