When I’m cooking with Mama Lou’s spirit in mind, I often swap out the store-bought onion soup mix for a homemade blend she taught me—dried onion flakes, a pinch of garlic powder, a sprinkle of parsley, and a dash of salt. It makes the flavor fresher and more personal, just like she would’ve done.
Instructions
- Preheat your oven to 375°F (190°C). This temperature ensures the chicken cooks evenly without drying out.
- In a medium bowl, combine the sour cream with the dry onion soup mix (or your homemade blend), salt, and pepper. Stir until well mixed. This creamy mixture is the heart of the dish, infusing every bite with flavor.
- Pat the chicken breasts dry with paper towels. This step helps the seasoning stick better and allows the chicken to brown slightly.
- In a large oven-safe skillet or baking dish, drizzle the olive oil or melted butter. Place the chicken breasts in the skillet and spoon the sour cream mixture evenly over each piece, covering generously.
- If using, sprinkle shredded cheddar cheese over the top of the chicken. This addition melts into a luscious topping that adds richness and a golden crust.
- Bake uncovered for 30-35 minutes. The chicken should reach an internal temperature of 165°F (74°C). The sour cream topping will bubble and thicken, creating a beautiful sauce.
- For a finishing touch, broil the chicken for 2-3 minutes to get a slight golden brown on the cheese topping—watch carefully to prevent burning.
- Remove from oven and let rest for 5 minutes. Garnish with fresh chives or green onions for a pop of color and fresh flavor.
