Learn how to make delicious Savory Pancake Tacos Recipe. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon dried oregano (or fresh if available)
  • 2 large eggs
  • 1 1/4 cups buttermilk (substitute with milk + 1 tablespoon lemon juice)
  • 2 tablespoons melted butter, plus extra for cooking
  • 1/2 cup finely chopped scallions
  • 1 cup cooked and crumbled breakfast sausage or chorizo (optional)
  • 1 ripe avocado, sliced
  • 1/2 cup shredded sharp cheddar or Monterey Jack cheese
  • Fresh cilantro leaves for garnish
  • Sour cream or Greek yogurt, for serving

Instructions

  1. In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and oregano. This dry mix is where you build the flavor foundation, just like Mama Lou’s careful layering of spices.
  2. In a separate bowl, beat the eggs lightly. Add the buttermilk and melted butter, stirring gently to combine. The buttermilk gives the pancakes a tender crumb and subtle tang, a trick Ouma showed me that always makes the difference.
  3. Pour the wet ingredients into the dry mix and stir until just combined. Avoid overmixing; a few lumps are perfectly fine and will keep your pancakes light and fluffy.
  4. Fold in the chopped scallions and cooked sausage or chorizo if using. This step fills your pancakes with bursts of flavor that will surprise and delight.
  5. Heat a non-stick skillet or griddle over medium heat and brush lightly with melted butter. Pour about 1/4 cup of batter for each pancake, spreading slightly to form a 4-5 inch circle.
  6. Cook for 2-3 minutes on the first side until bubbles appear on the surface and the edges start to look set. Flip carefully and cook for another 1-2 minutes until golden brown. Mama Lou always said, “patience is the secret ingredient” and I’ve found that waiting for the perfect golden crust really pays off.
  7. Transfer cooked pancakes to a warm plate and cover with foil to keep warm while you finish the batch. This keeps them soft and pliable—perfect for folding into tacos.
  8. To assemble, layer each pancake with shredded cheese, avocado slices, a dollop of sour cream or Greek yogurt, and garnish with fresh cilantro. Fold gently into a taco shape and serve immediately.
