  • 1/4 cup chopped fresh cilantro
  • 1 lime, cut into wedges
  • Sour cream or Mexican crema, for serving (optional)

Substitution tips: If you prefer a leaner option, ground turkey or chicken works wonderfully here. For a vegetarian twist, swap the beef with seasoned black beans or lentils. You can also use gluten-free tortillas to suit dietary needs without sacrificing flavor.

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté for about 3-4 minutes until soft and translucent. I remember Mama Lou always said, “Onions are the heart of flavor,” and she was right every time.
  2. Add the minced garlic and cook for another 30 seconds until fragrant, stirring constantly so it doesn’t burn.
