- Gather all your ingredients and prepare your blender. Fresh pineapple chunks make the biggest difference, but canned works well in a pinch.
- For the creamy Piña Colada: In a blender, combine 1 cup pineapple chunks, 1 cup coconut cream, 1/4 cup white rum (if using), 1 tablespoon lime juice, 1 tablespoon simple syrup, and 1/4 cup crushed ice. Blend on high until smooth and creamy.
- Pour the creamy Piña Colada into your favorite glass and set aside.
- For the lighter Piña Colada: Rinse the blender, then blend 1 cup pineapple chunks, 1 cup coconut water, 1/4 cup white rum (optional), 1 tablespoon lime juice, 1 tablespoon simple syrup, and 1/4 cup crushed ice until frothy but still slightly textured.
- Pour the lighter Piña Colada into a separate glass.
- Garnish both drinks with a fresh pineapple wedge and a sprig of mint for that signature tropical touch.
