- 12 ounces of your favorite pasta (such as linguine or fettuccine)
- 2 cups fresh spinach leaves
- 1 cup fresh basil leaves
- 1 ripe avocado, pitted and peeled
- 2 cloves garlic, minced
- 1/4 cup pine nuts, toasted
- 1/4 cup grated Parmesan cheese (or nutritional yeast for a vegan option)
- 1/4 cup extra-virgin olive oil
- Juice of 1 lemon
- Salt and pepper, to taste
- 1/4 teaspoon red pepper flakes (optional, for a bit of heat)
Instructions
- Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and reserve 1 cup of pasta water.
- In a blender or food processor, combine spinach, basil, avocado, garlic, toasted pine nuts, Parmesan cheese, olive oil, and lemon juice. Blend until smooth and creamy, adding reserved pasta water as needed to reach your desired consistency.
- Season the sauce with salt, pepper, and red pepper flakes, if using. Taste and adjust seasoning as necessary.
- In a large serving bowl, toss the cooked pasta with the green sauce until well coated. If the sauce is too thick, add a bit more pasta water to loosen it.
- Serve immediately, garnished with additional Parmesan cheese, pine nuts, and fresh basil leaves.
