- 4 boneless, skinless chicken thighs (you can substitute with chicken breasts if preferred)
- 2 tablespoons olive oil (or substitute with avocado oil for a lighter taste)
- 4 tablespoons unsalted butter, divided
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 2 cups chicken broth (low sodium recommended)
- 1 cup heavy cream (can substitute with half-and-half for a lighter version)
- 8 ounces egg noodles
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley (fresh parsley works beautifully as a garnish)
- Salt and freshly ground black pepper, to taste
- 1/2 cup grated Parmesan cheese (optional but highly recommended for extra richness)
Instructions
- Heat the olive oil and 2 tablespoons of butter in a large skillet over medium-high heat. Once hot, add the chicken thighs, seasoning them generously with salt, pepper, and half of the dried thyme. Cook for about 5-6 minutes on each side, until golden brown and cooked through. Remove the chicken from the pan and set aside.
- In the same pan, reduce the heat to medium and add the chopped onion. Sauté for 3-4 minutes until translucent, then stir in the garlic and cook for another minute until fragrant. This step always reminds me of Mama Lou’s kitchen, where the scent of onions and garlic was the start of every memorable meal.
- Pour in the chicken broth and heavy cream, stirring well to combine. Bring the mixture to a gentle boil, then add the egg noodles, making sure they are submerged. Sprinkle in the remaining thyme and parsley, and season with a little more salt and pepper.
- Reduce the heat to low, cover the pan, and let it simmer for about 8-10 minutes, stirring occasionally to prevent the noodles from sticking. The noodles will absorb the creamy broth, thickening the sauce beautifully.
- Return the chicken thighs to the pan, nestling them into the noodles. Add the remaining 2 tablespoons of butter and sprinkle the Parmesan cheese over the top. Cover and cook for an additional 3-5 minutes, until the chicken is heated through and the sauce has thickened to your liking.
- Before serving, taste and adjust the seasoning if needed. The butter and cheese create a luscious sauce that coats every noodle, making each bite a comforting reminder of family dinners and shared moments.
