- 4 salmon fillets (6 ounces each), skin-on or skinless
- 1 ripe mango, peeled and diced
- 1/4 cup soy sauce (use low sodium for a milder saltiness)
- 2 tablespoons honey or maple syrup (for a natural sweetness)
- 2 tablespoons rice vinegar or apple cider vinegar
- 2 cloves garlic, minced
- 1 teaspoon freshly grated ginger
- 1 tablespoon sesame oil (or substitute with olive oil)
- 1 teaspoon cornstarch mixed with 2 tablespoons cold water (slurry for thickening)
- 1/4 teaspoon crushed red pepper flakes (optional, for a gentle heat)
- Sesame seeds, for garnish
- Chopped green onions, for garnish
Instructions
- Start by preparing the mango puree. Place the diced mango in a blender or food processor and blend until smooth. If you prefer a chunkier glaze, pulse just a few times.
- In a small saucepan over medium heat, combine the mango puree, soy sauce, honey, rice vinegar, minced garlic, grated ginger, sesame oil, and red pepper flakes if using. Stir well to combine.
- Bring the mixture to a gentle simmer, then stir in the cornstarch slurry. Cook for 2-3 minutes until the sauce thickens slightly, stirring constantly. Remove from heat and set aside.
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easier cleanup.
- Place the salmon fillets on the prepared baking sheet, skin-side down if applicable. Brush half of the mango teriyaki glaze generously over the salmon.
- Bake the salmon for 10-12 minutes, depending on thickness. The salmon should be opaque and flake easily with a fork. Halfway through cooking, brush the remaining glaze on top for that extra layer of flavor.
- Once cooked, remove from the oven and let the salmon rest for a couple of minutes. This step reminds me of Mama Lou’s advice to “let the flavors settle and the fish relax”—a small gesture that makes a big difference.
- Garnish with toasted sesame seeds and chopped green onions before serving. This final touch adds a lovely crunch and a fresh pop of color.
