Instructions

  1. Start by preparing the mango puree. Place the diced mango in a blender or food processor and blend until smooth. If you prefer a chunkier glaze, pulse just a few times.
  2. In a small saucepan over medium heat, combine the mango puree, soy sauce, honey, rice vinegar, minced garlic, grated ginger, sesame oil, and red pepper flakes if using. Stir well to combine.
  3. Bring the mixture to a gentle simmer, then stir in the cornstarch slurry. Cook for 2-3 minutes until the sauce thickens slightly, stirring constantly. Remove from heat and set aside.
  4. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easier cleanup.
  5. Place the salmon fillets on the prepared baking sheet, skin-side down if applicable. Brush half of the mango teriyaki glaze generously over the salmon.
  6. Bake the salmon for 10-12 minutes, depending on thickness. The salmon should be opaque and flake easily with a fork. Halfway through cooking, brush the remaining glaze on top for that extra layer of flavor.
