  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, finely chopped
  • 2 tablespoons fresh dill, chopped
  • 1/4 cup green onions, sliced thin
  • 1/2 teaspoon sea salt, or to taste
  • 1/4 teaspoon freshly ground black pepper
  • Optional: 1/4 teaspoon red pepper flakes for a subtle kick
  • Optional substitutions:
    • Use water instead of vegetable broth for a lighter flavor
    • Swap dill for fresh cilantro or basil based on preference
    • Use canned white beans instead of garbanzo beans for variation

Instructions

  1. Rinse the quinoa under cold water until the water runs clear. This removes the natural coating called saponin that can taste bitter.
  2. In a medium saucepan, bring the vegetable broth (or water) to a boil. Add rinsed quinoa, reduce the heat to low, cover, and simmer for about 15 minutes or until all the liquid is absorbed and the quinoa is fluffy. Remove from heat and let it sit covered for 5 minutes.
  3. While the quinoa cooks, prepare the lemon herb dressing. In a small bowl, whisk together the fresh lemon juice, olive oil, minced garlic, sea salt, black pepper, and red pepper flakes if using. This dressing is where the magic happens — bright and zesty, just like Mama Lou’s favorite salads.
  4. Fluff the cooked quinoa with a fork to separate the grains. Transfer it to a large mixing bowl.
  5. Add the rinsed garbanzo beans, chopped parsley, dill, and green onions to the quinoa.
  6. Pour the lemon herb dressing over the quinoa mixture. Gently toss everything together until the beans and herbs are evenly coated. Taste and adjust seasoning if needed — sometimes a little extra lemon juice or salt brings it to life.
  7. Serve immediately, or chill in the refrigerator for an hour to let the flavors meld beautifully. I often make this a day ahead, especially when planning family meals, as the flavors deepen and the dish feels even more harmonious.
