  • 1 teaspoon honey or agave syrup (optional, to balance heat)

If you don’t have Dijon mustard, yellow mustard works just fine, though it will slightly change the flavor profile. For a dairy-free version, swap out mayo for a vegan mayonnaise, and feel free to adjust the jalapeno amount to make it your own.

Instructions

  1. Place the eggs in a single layer in a large pot and cover with cold water by about an inch. Bring the water to a boil over medium-high heat.
  2. As soon as the water boils, cover the pot, turn off the heat, and let the eggs sit for 12 minutes. This method helps avoid overcooking and keeps the yolks creamy.
  3. Drain the hot water and immediately transfer the eggs to an ice bath to cool completely, about 10 minutes. This also makes peeling easier—Mama Lou always said cold eggs peel like a dream.
  4. Once cooled, gently peel each egg and slice them in half lengthwise. Carefully remove the yolks and place them in a medium bowl.
  5. Add mayonnaise, Dijon mustard, apple cider vinegar, smoked paprika, honey, and a pinch of salt and pepper to the bowl with the yolks. Mash everything together with a fork or whisk until smooth and creamy.
