Perfectly Thickened Broccoli Casserole

A rich, creamy, and thick broccoli casserole with a crispy buttery topping. Perfect for any gathering!

Ingredients

2 (10 oz) packages frozen chopped broccoli, cooked and thoroughly drained

1 cup mayonnaise

1 cup grated sharp cheddar cheese

1 (10¾ oz) can condensed cream of mushroom soup

2 large eggs, lightly beaten

1 tablespoon all-purpose flour or cornstarch

2 cups crushed buttery crackers

2 tablespoons melted butter

Instructions

  1.  Preheat oven to 350°F (175°C). Grease a 13×9-inch baking dish with cooking spray.
  2.  In a large bowl, whisk together mayonnaise, cheddar cheese, cream of mushroom soup, eggs, and flour or cornstarch until smooth.
  3.  Add the cooked and drained broccoli to the mixture and stir until evenly combined.
  4.  Spread the mixture into the prepared baking dish.
  5.  In a separate bowl, mix crushed crackers with melted butter. Sprinkle evenly over the top of the casserole.
  6.  Bake for 35–40 minutes, or until the topping is golden brown and the casserole is thickened and set.
  7.  Let the casserole rest for 5–10 minutes before serving to allow it to thicken further.
