- 2 boneless, skinless chicken breasts (about 1 pound), cut into bite-sized pieces
- 1/4 cup honey (substitute maple syrup for a different sweetness)
- 2 tablespoons sriracha sauce (adjust more or less to taste)
- 2 tablespoons soy sauce (or tamari for gluten-free)
- 1 tablespoon rice vinegar
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1 tablespoon vegetable oil or avocado oil
- 3 cups cooked jasmine or basmati rice (warm)
- 1 cup shredded carrots
- 1 cup thinly sliced cucumber
- 2 green onions, chopped
- 1 tablespoon toasted sesame seeds
- Optional: fresh cilantro leaves for garnish
Instructions
- Prepare your rice according to package instructions while you prep the chicken and sauce. Warm, fluffy rice is the base that holds all the flavors together.
- In a small bowl, whisk together honey, sriracha, soy sauce, rice vinegar, minced garlic, and grated ginger. This sauce will be your flavor powerhouse—adjust the sriracha to your preferred heat level.
- Heat the vegetable oil in a large skillet over medium-high heat. Once hot, add the chicken pieces in a single layer. Cook for about 4-5 minutes without stirring to get a nice sear.
- Flip the chicken and cook for another 3-4 minutes until fully cooked through and golden brown on all sides.
- Pour the honey sriracha sauce over the chicken in the skillet. Stir well to coat all the pieces evenly. Let it simmer for 2-3 minutes, allowing the sauce to thicken slightly and glaze the chicken beautifully.
- Remove from heat and set aside.
- Assemble your bowls: start with a generous scoop of warm rice, then top with the glazed chicken.
- Add shredded carrots, cucumber slices, and sprinkle chopped green onions and toasted sesame seeds over the top. If you’re feeling extra, a few cilantro leaves bring a fresh burst that cuts through the richness.
- Serve immediately and enjoy! The combination of textures and flavors is what makes this dish so satisfying.
