If you want to switch things up, feel free to substitute the banana with thin slices of apple or pear for a different but equally delicious sweet element. - Start by softening your butter. Spread a thin, even layer of butter on one side of each bread slice. This will create that golden, crispy exterior we all love.
- Place one slice of bread, buttered side down, on a preheated skillet over medium heat. I like to use cast iron because it heats evenly, but a non-stick pan works just fine.
- Layer one slice of cheese on the bread. The cheese is the glue that holds this sandwich together, so don’t be shy.
- Arrange banana slices evenly over the cheese. If you’re using cinnamon, sprinkle a light dusting now. This step always reminds me of how Mama Lou would hum softly, a signal that something good was cooking.
- Drizzle the honey over the bananas. This sweet touch is what transforms the sandwich from ordinary to extraordinary.

- Remove from the pan and let it sit for a minute before slicing. This little rest lets the flavors meld beautifully. Serving it too hot might mean losing some of that luscious melted cheese.
