- 3 ½ cups all-purpose flour, plus extra for dusting (substitute with bread flour for chewier texture)
- 1 packet (2 ¼ teaspoons) active dry yeast
- 1 cup warm water (about 110°F)
- 2 tablespoons granulated sugar
- 1 teaspoon salt
- 3 tablespoons unsalted butter, melted (plus extra for brushing)
- 4 cloves garlic, finely minced
- ½ cup freshly grated Parmesan cheese (substitute with Pecorino Romano for a sharper taste)
- 2 tablespoons fresh parsley, chopped (optional, for garnish)
- Olive oil, for brushing (optional)
Instructions
- In a small bowl, combine the warm water, sugar, and yeast. Stir gently and let it sit for 5-10 minutes until frothy. This step always reminds me of Mama Lou’s patience—she said good dough needs a little time and love to wake up.
- In a large mixing bowl, whisk together the flour and salt. Make a well in the center and pour in the yeast mixture along with 2 tablespoons of melted butter.
- Mix until a shaggy dough forms, then turn it onto a lightly floured surface. Knead for about 8-10 minutes until the dough is smooth and elastic. I always ask Ouma to join me here—kneading together feels like a secret handshake.
- Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm spot for 1 to 1 ½ hours, or until doubled in size.
- Once risen, punch down the dough gently and divide it into 12 equal pieces. Roll each piece into a rope about 10 inches long.
- Tie each rope into a loose knot, tucking the ends underneath. This step always brings a smile—Mama Lou said tying knots was like tying memories together.
- Place the knots on a parchment-lined baking sheet, cover with a towel, and let them rise again for 30 minutes.
- Preheat your oven to 375°F (190°C). While it heats, mix the remaining melted butter with the minced garlic.
- Brush the knots generously with the garlic butter mixture. Bake for 15-18 minutes until golden brown and fragrant.
- Remove the knots from the oven and immediately brush with any leftover garlic butter. Sprinkle with Parmesan cheese and chopped parsley while still warm.
