- 2 large eggs, beaten
- 1/2 cup cooked and crumbled bacon or cooked and crumbled sausage (optional, but Mama Lou always said meat makes it better)
- 1/4 cup chopped green onions (for a fresh bite)

- Preheat your oven to 350°F. I always find that warming the kitchen with the oven on makes the whole cooking experience cozier—Mama Lou’s kitchen always smelled like home when hers was heating up.
- In a large mixing bowl, combine the Jiffy Corn Muffin Mix (or your homemade cornbread mix), sour cream, and melted butter. Stir until smooth and creamy. This base is where the magic starts—rich and comforting.
- Add the beaten eggs to the mixture and whisk until fully incorporated. Eggs bring everything together, like family at the table.
- Fold in the whole kernel corn and creamed corn. The mix of textures here gives the casserole a delightful bite that Mama Lou always insisted was essential.
- Stir in the shredded cheddar cheese, cooked bacon or sausage (if using), chopped green onions, salt, and black pepper. I love this part because it’s where you can really customize—Ouma liked hers extra cheesy, so I’d sprinkle in a little more just for her.
- Grease an 8×8-inch baking dish with butter or non-stick spray. Pour the mixture evenly into the dish and smooth the top with a spatula.
- Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean. You’ll know it’s ready when the edges pull away slightly from the pan, just like Mama Lou’s cornbread always did.
