- 6 ounces of sharp white cheddar cheese, sliced
- 1/4 cup sun-dried tomatoes packed in oil, drained and chopped
- 2 tablespoons unsalted butter, softened
- 1 tablespoon mayonnaise (optional, for extra creaminess)
- 1 teaspoon fresh basil, finely chopped (or 1/2 teaspoon dried basil)
- Salt and freshly ground black pepper, to taste
Substitutions: If you don’t have sourdough, a rustic French bread or even whole wheat works beautifully. For cheese, Gruyère or a mild mozzarella can gently shift the flavor while keeping that creamy melt. And if you prefer a vegan twist, use plant-based butter and cheese alternatives—just make sure they melt well!
Instructions
- Start by prepping your ingredients. Chop the sun-dried tomatoes into small pieces and finely chop the basil. If your cheddar isn’t sliced, slice it into thin, even pieces for better melting.
- Butter one side of each slice of bread generously. This will be the outside that crisps up in the pan. For a little extra richness, spread mayonnaise on the unbuttered side of the bread—this was a trick Mama Lou taught me to keep the inside moist and creamy.
- On the unbuttered side of two slices, layer the cheese evenly. Sprinkle the chopped sun-dried tomatoes and basil over the cheese. Season lightly with salt and pepper. Top with the remaining slices of bread, buttered side out.
- Heat a heavy skillet or cast-iron pan over medium-low heat. Place the sandwiches in the pan carefully. Cook slowly for about 4-5 minutes on one side, checking to ensure the bread is golden brown but not burning.
- Flip the sandwiches gently and cook the other side for another 4-5 minutes, pressing down slightly with a spatula. The cheese should be melted and gooey, and the bread crisp and fragrant.
- Once cooked, remove from the pan and let rest for a minute before slicing. This helps the cheese set just a bit, making it easier to cut without everything sliding out.
- Serve warm, with a side of your favorite pickles or a fresh green salad for a complete meal.
