Ingredients
Scale
- 4 large turkey breast cutlets (about 6 ounces each)
- 2 cups homemade or store-bought stuffing (I love a sage and onion mix)
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1 teaspoon dried thyme
- 1 teaspoon dried sage
- 1/4 cup chicken broth or turkey drippings
- Salt and freshly ground black pepper, to taste
- 2 tablespoons olive oil
- Kitchen twine or toothpicks, for securing roll ups
Substitution Tips: If you don’t have turkey breast cutlets, thinly sliced chicken breasts work beautifully here. For the stuffing, feel free to use a gluten-free version or swap with cornbread stuffing if you prefer a sweeter note. I remember once making this with my sister Ouma using cornbread stuffing—such a fun twist that added a Southern flair to the dish!
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a baking dish or line it with parchment paper.
- Lay out the turkey breast cutlets on a clean surface. If they’re uneven in thickness, gently pound them to about 1/4 inch thick using a meat mallet or rolling pin. This step reminds me of Mama Lou’s patience as she taught me the importance of even cooking—tenderness is key.
- In a medium bowl, combine the stuffing, Parmesan cheese, garlic, parsley, thyme, sage, salt, and pepper. Add the chicken broth or turkey drippings a little at a time until the stuffing is moist but not soggy. This mixture smells like home and always brings back the afternoons spent baking with Ouma.
- Place about 1/3 cup of the stuffing mixture onto each turkey cutlet, spreading it evenly but leaving a small border around the edges.
- Carefully roll up each turkey breast, tucking in the sides as you go to encase the stuffing. Secure the roll ups with kitchen twine or toothpicks.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the roll ups seam side down and sear until golden brown, about 3-4 minutes per side. This step locks in the juices and adds beautiful color—a trick Mama Lou swore by.
- Transfer the skillet to the preheated oven (or move the roll ups to your baking dish) and bake for 20-25 minutes, or until the internal temperature reaches 165°F (74°C).
- Remove from the oven and let rest for 5 minutes before slicing. This resting time helps keep the juices inside, making every bite melt in your mouth.
