- 1 ball of pizza dough (about 12 ounces), store-bought or homemade
- 1/3 cup fig jam (homemade if you have time, or your favorite store-bought brand)
- 4 ounces thinly sliced prosciutto
- 1 cup shredded mozzarella cheese
- 1/2 cup crumbled goat cheese (optional, but it adds a lovely tang)
- 1 tablespoon olive oil
- Fresh arugula for topping (about 1 cup)
- Freshly ground black pepper, to taste
- 1 teaspoon fresh thyme leaves or a pinch of dried thyme (optional)
- Flour for dusting your work surface
If you don’t have goat cheese, ricotta or feta can be delightful alternatives. And if fig jam is hard to find, a good-quality apricot or peach preserve can work beautifully, especially if you enjoy a slightly different fruity note.
Instructions
- Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven to heat up; otherwise, a baking sheet will work fine.
- Lightly flour your work surface. Roll out the pizza dough into a 12-inch circle, about 1/4 inch thick. I remember Mama Lou always reminding me to “be gentle with the dough, like you’re hugging an old friend.”
- Transfer the dough to a sheet of parchment paper for easy handling.
- Brush the dough lightly with olive oil, especially around the edges to help it crisp up beautifully.
- Spread the fig jam evenly over the surface, leaving about an inch around the edge for the crust. The first time I made this with Ouma, she insisted on using a spoon to dollop the jam and then spread it gently—her way of savoring each step.
- Sprinkle the mozzarella cheese evenly over the fig jam. Then, scatter dollops of goat cheese if using.
- Slide the pizza (with parchment) onto the hot pizza stone or baking sheet. Bake for 10-12 minutes, until the crust is golden and the cheese is melted and bubbly.
- Remove the pizza from the oven and immediately arrange the prosciutto slices on top. The residual heat will soften the prosciutto just enough without making it too crispy.
- Scatter fresh arugula and thyme leaves over the pizza. Finish with a few twists of black pepper for a subtle kick.
- Slice and serve warm. I always find that sharing this pizza with family, especially while reminiscing about Mama Lou’s stories, makes it taste even better.
