Substitution tips: If you don’t have bone-in chicken thighs, boneless thighs or even chicken breasts can work, but the cooking time will be shorter and the texture slightly different. Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with foil or parchment for easy cleanup.
  2. Pat the chicken thighs dry with paper towels. This step is key to achieving crisp, golden skin—Mama Lou always said, “Dry skin is happy skin.”
  3. In a small bowl, whisk together honey, tomato paste, minced garlic, smoked paprika, cayenne pepper, cumin, apple cider vinegar, salt, and black pepper until smooth. This sauce is the heart of the dish, a perfect balance of sweet and heat.
  4. Heat olive oil in a large oven-safe skillet over medium-high heat. When the oil shimmers, add the chicken thighs skin-side down. Sear for about 5 minutes until the skin is golden and crispy, then flip and cook for another 3 minutes on the other side.
  5. Pour the honey and spice sauce over the chicken, making sure each piece is well coated. Transfer the skillet to the preheated oven.
