Ingredients
Scale
- 1 pound ground beef (80/20 blend for juicy burgers)
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- 1/2 teaspoon ground black pepper
- 1 teaspoon salt
- 4 slices sharp cheddar cheese
- 4 hamburger buns, toasted
- 1/4 cup mayonnaise
- 2 tablespoons ketchup
- 1 tablespoon yellow mustard
- 1 tablespoon pickle relish (optional, but adds a nice tang)
- Butter for toasting buns
- Optional toppings: lettuce, tomato slices, pickles, red onion rings
Substitution tips: If you prefer, swap ground beef for ground turkey or chicken for a lighter option. You can also use pepper jack cheese for a little extra kick. For a dairy-free version, try vegan cheese slices and a plant-based mayo.
Instructions
- In a large bowl, combine the ground beef, chopped onion, minced garlic, smoked paprika, chili powder, salt, and black pepper. Use your hands to gently mix everything until just combined—overworking the meat will make the burgers tough.
- Divide the mixture into 4 equal portions and shape each into a patty about ¾-inch thick. Make a small indentation in the center of each patty with your thumb to prevent it from puffing up during cooking.
- Heat a cast-iron skillet or grill pan over medium-high heat. While it warms, butter the insides of your hamburger buns and toast them on the skillet until golden brown. Set aside.
- Add the patties to the hot skillet and cook for about 4 minutes on the first side without moving them. Flip the patties and immediately place a slice of cheddar cheese on each one. Cook for another 3-4 minutes for medium doneness. Adjust time if you prefer your burgers more or less cooked.
- While the burgers cook, prepare the sauce by mixing mayonnaise, ketchup, mustard, and pickle relish in a small bowl. This sauce is the secret behind the “crack” factor—creamy, tangy, with just the right bite.
- Once the cheese is melted and the patties are cooked through, remove them from the skillet. Spread the sauce generously on the toasted buns, add the burger patties, and top with your choice of lettuce, tomato, pickles, and onions.
- Serve immediately and watch faces light up with every juicy, flavorful bite.
“Mama Lou always said the secret to a good burger was love in every layer, and these crack burgers are no exception.”
