If you don’t have fresh limes on hand, bottled lime juice can work in a pinch, but the fresh juice truly makes all the difference—something Mama Lou always insisted on. For the sweetener, honey gives that warm floral note I love, but maple syrup or agave will keep it vegan-friendly. And if you prefer a creamier texture, try blending in a little coconut cream with the milk.
Instructions
- Start by juicing your limes. Roll each lime on the counter to soften it, then cut in half and squeeze out the juice—about 1/2 cup for the recipe. Freshness here is key, so avoid pre-bottled if possible.
- In a medium bowl or pitcher, whisk together the coconut milk, freshly squeezed lime juice, honey (or your chosen sweetener), and vanilla extract if using. Stir until the honey is completely dissolved.
- Fill your serving glasses halfway with ice cubes. This not only chills the drink but adds a satisfying crunch as you sip, something I fondly remember from when Ouma and I would laugh about who got more ice in their glass.
- Pour the coconut-lime mixture over the ice, filling each glass about two-thirds full.
