Ingredients
- 4 medium russet potatoes, peeled and cut into 1-inch cubes
- 1 pound smoked sausage, sliced into 1/2-inch rounds (Andouille or Kielbasa work beautifully)
- 2 cups shredded sharp cheddar cheese
- 1 packet (1 ounce) ranch seasoning mix
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1/4 cup chopped green onions (plus extra for garnish)
- 2 tablespoons unsalted butter
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- Salt and freshly ground black pepper, to taste
- Optional: 1/2 cup cooked and crumbled bacon for extra smoky flavor
If you want to lighten this dish up, you can substitute Greek yogurt for the sour cream and mayonnaise. For a dairy-free version, use a plant-based cheese alternative and skip the sour cream, replacing it with a splash of coconut cream or cashew cream.
Instructions
- Preheat your oven to 400°F (200°C). Lightly grease a large baking dish or a rimmed sheet pan.
- Bring a large pot of salted water to a boil. Add the cubed potatoes and cook for about 8 minutes, until just tender but not falling apart. Drain and set aside.
- While the potatoes cook, heat a large skillet over medium heat. Add the sliced smoked sausage and cook until browned and slightly crispy, about 5-7 minutes. Remove from heat and set aside.
- In a large mixing bowl, combine the cooked potatoes, sausage, shredded cheddar cheese (reserve about 1/2 cup for topping), ranch seasoning mix, sour cream, mayonnaise, chopped green onions, butter, garlic powder, smoked paprika, salt, and pepper. Gently fold everything together until well mixed.
- Transfer the mixture into the prepared baking dish, spreading it out evenly. Sprinkle the reserved cheddar cheese on top.
- Bake uncovered for 20-25 minutes, or until the cheese is melted, bubbly, and turning golden brown at the edges.
- Remove from oven and let it cool for 5 minutes. Garnish with extra chopped green onions before serving.
