- 6 cups peeled, cored, and sliced Granny Smith apples (about 6 medium apples)
- 1 cup granulated sugar
- 1/4 cup brown sugar, packed
- 2 teaspoons ground cinnamon
- 1/4 teaspoon ground nutmeg (optional, but Mama Lou always added this!)
- 1 tablespoon lemon juice (to brighten the apples and prevent browning)
- 2 tablespoons cornstarch (for thickening the filling)
- 1/2 cup unsalted butter, melted
- 1 cup all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 3/4 cup whole milk (substitute with almond or oat milk for dairy-free)
- 1 teaspoon vanilla extract
- 1 cup caramel sauce, homemade or store-bought (I’ll share my favorite quick caramel in the tips!)
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with butter or non-stick spray.
- In a large mixing bowl, combine the sliced apples, granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Toss everything gently until the apples are evenly coated. This filling is what makes the dessert sing—don’t rush this step!
- Pour the apple mixture into your prepared baking dish, spreading it out evenly. Set aside while you prepare the cobbler batter.
- In a separate bowl, whisk together the flour, baking powder, and salt. Add the melted butter, milk, and vanilla extract. Stir until just combined; the batter will be slightly thick but pourable. Avoid overmixing to keep your cobbler tender.
- Pour the batter evenly over the apple filling. It might seem like a thin layer, but trust me, it will puff up beautifully as it bakes.
- Bake uncovered for 40-45 minutes. You’ll know it’s done when the top is golden brown and a toothpick inserted in the batter comes out clean, and the apples are bubbling around the edges.
- Remove from the oven and let it cool for about 10 minutes. Then, drizzle the caramel sauce generously over the warm cobbler. The caramel melts into the cracks, creating those luscious pockets of gooey sweetness that Mama Lou always promised.
- Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream, and watch the smiles unfold at your table.
