If you don’t have fresh blackberries, frozen can work in a pinch—just thaw and drain well to avoid sogginess. For the ricotta, whole milk ricotta offers the creamiest texture, but part-skim ricotta is a fine substitute if you’re watching fat intake. And for those who love a little crunch, a handful of toasted pine nuts sprinkled on top never fails to impress, a trick I picked up from Mama Lou’s own kitchen experiments.
Instructions
- Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven to heat up; if not, a rimmed baking sheet will work fine.
- On a lightly floured surface, gently stretch or roll the pizza dough into a 12-inch round. Transfer it to a piece of parchment paper for easy handling.
- In a small bowl, mix the ricotta cheese with minced garlic, lemon zest, 1 tablespoon of olive oil, and a pinch of salt and pepper. This mixture is the creamy base that carries the flavors.
- Spread the ricotta mixture evenly over the dough, leaving about a 1-inch border around the edges.
- Distribute the fresh blackberries evenly on top of the ricotta. If you’re using mozzarella, sprinkle it lightly over the berries to add a melty texture.
- Drizzle the pizza with 1 tablespoon of olive oil and bake on the hot stone or baking sheet for 12-15 minutes, or until the crust is golden and crisp.
- Remove the pizza from the oven and immediately scatter fresh basil leaves over the top. Drizzle with honey to add a final touch of sweetness.
- Let the pizza cool for a few minutes before slicing. Serve warm and enjoy the blend of creamy, sweet, and herbaceous flavors.
