- 4 slices of sturdy bread (I prefer sourdough or whole wheat for extra flavor)
- 1 ripe avocado (medium-sized, creamy but firm)
- 1 cup shredded sharp cheddar cheese
- 2 tablespoons unsalted butter, softened
- 1 teaspoon fresh lemon juice (to keep the avocado bright and green)
- Salt and freshly ground black pepper, to taste
- Optional: pinch of smoked paprika or chili flakes for a little kick
- Optional substitution: Use mozzarella or pepper jack cheese for a different flavor profile
Instructions
- Start by preheating a skillet over medium heat. A cast-iron pan works best for that perfect golden crust.
- In a small bowl, mash the ripe avocado with lemon juice, salt, pepper, and if you like, a pinch of smoked paprika. The lemon juice is a trick Mama Lou taught me to keep the avocado from browning too fast and to add a subtle zing.
- Butter one side of each slice of bread evenly. This will be the outside that gets toasted.
- Flip the bread slices over so the unbuttered side is facing up. Spread a generous layer of the avocado mixture on two of the slices.
- Sprinkle shredded cheddar cheese evenly over the avocado. The sharpness of the cheddar contrasts beautifully with the smooth avocado.
- Top with the remaining slices of bread, buttered side out, creating two sandwiches.
- Place one sandwich in the hot skillet. Cook for about 3-4 minutes or until the bread is golden brown and crispy. Then, carefully flip and cook the other side for another 3-4 minutes, pressing lightly with a spatula to help the cheese melt.
- Once the cheese is melted and the bread is perfectly toasted, remove the sandwich from the pan and let it rest for a minute before slicing. This helps everything settle and makes for a cleaner cut.
- Repeat with the second sandwich.
