Ingredients
- 2 cups old-fashioned rolled oats (certified gluten-free if needed)
- 1 1/2 teaspoons ground cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 medium apples (I love using Gala or Fuji), peeled, cored, and diced
- 2 large eggs
- 1/4 cup pure maple syrup or honey (for a subtler sweetness, use agave)
- 2 cups whole milk or your favorite plant-based milk (almond or oat milk work well)
- 2 teaspoons vanilla extract
- 1/4 cup melted unsalted butter or coconut oil
- Optional: 1/3 cup chopped walnuts or pecans for extra crunch
If you want to switch things up, I sometimes swap the apples for pears, especially when Mama Lou’s garden was bursting with them in late fall. You can also add a handful of raisins or dried cranberries for a tart contrast, a trick Ouma swears by. The key is to keep the balance between soft, tender fruit and the cozy spices that bring everything together.
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a 9×9-inch baking dish or similar size casserole pan.
- In a large bowl, combine the rolled oats, ground cinnamon, baking powder, and salt. Stir until everything is evenly mixed. This dry mix is the foundation of the bake.
- Toss the diced apples into the oat mixture, making sure they’re well distributed. The apples add moisture and bursts of sweetness throughout the bake.
- In a separate bowl, whisk together the eggs, maple syrup (or honey), milk, vanilla extract, and melted butter or coconut oil until smooth and combined. This wet mixture will bind the oats and apples together beautifully.
- Pour the wet ingredients over the oat and apple mixture. Stir gently but thoroughly to ensure every oat is coated and the apples are nestled within the batter.
- If you’re using nuts, fold them in now for some delightful crunch in every bite.
- Pour the entire mixture into the prepared baking dish and smooth the top with a spatula. This is when the magic begins—the smells, the anticipation.
- Bake in the preheated oven for 40-45 minutes. You’ll know it’s done when the top is golden brown and a toothpick inserted in the center comes out mostly clean with a few moist crumbs.
- Let the bake cool for about 10 minutes before slicing. This allows it to set up nicely, making it easier to serve.
