Ingredients
Scale
- 4 large russet potatoes, peeled and cut into 1/2-inch thick fries
- 2 tablespoons vegetable oil (or substitute with avocado oil for a healthier option)
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon cayenne pepper (adjust to heat preference)
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon salt, plus more to taste
- 1/2 teaspoon black pepper
- 1/4 cup mayonnaise
- 2 tablespoons Wingstop-style Louisiana Voodoo sauce (or substitute with a blend of hot sauce and melted butter)
- 1 tablespoon chopped green onions
- Optional: shredded cheddar cheese or crumbled blue cheese for a richer finish
Instructions
- Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly grease it. This ensures the fries crisp up nicely without sticking.
- Rinse the cut potatoes under cold water to remove excess starch. This step is crucial for getting that perfect crunch. After rinsing, pat them completely dry with a clean kitchen towel.
- In a large bowl, toss the fries with vegetable oil, smoked paprika, garlic powder, onion powder, cayenne, oregano, thyme, salt, and black pepper. Make sure each fry is evenly coated with the seasoning mix. This is where the Louisiana magic starts to come alive.
- Spread the fries out in a single layer on the baking sheet. Avoid overcrowding, or they’ll steam instead of crisp.
- Bake for 30-35 minutes, flipping the fries halfway through to ensure even browning. You’ll know they’re ready when they turn golden and crispy, with edges just a little charred—a sign of deep flavor.
- While the fries bake, mix the mayonnaise and Wingstop-style Louisiana Voodoo sauce in a small bowl. This creamy, spicy drizzle is what sets these fries apart. If you don’t have the sauce, blend hot sauce with melted butter for a similar zing.
- Once fries are done, transfer them to a serving platter. Drizzle the voodoo sauce mixture generously over the top, then sprinkle with chopped green onions and, if you like, some shredded cheese for an extra indulgent touch.
- Serve immediately, and savor! I always remember how Mama Lou told me that food tastes best when shared, so invite someone you love to enjoy these fries with you.
