Ingredients
– 2 cups pitted cherries (fresh or frozen)
– 1/2 cup granulated sugar
– 2 tablespoons cornstarch
– 1/4 cup water
– 1 teaspoon lemon juice
– 1/2 teaspoon almond extract (optional)
Instructions
- – In a medium saucepan, combine cherries and sugar. Cook over medium heat until the cherries release their juices, about 5 minutes.
- – In a small bowl, whisk cornstarch and water until smooth. Add this mixture to the saucepan.
- – Stir continuously and cook until the mixture thickens, about 2–3 minutes.
- – Add lemon juice and almond extract (if using). Stir to combine.
- – Remove from heat and let the filling cool completely before using it in a cake or as a topping.
