  • 2 cups shredded mozzarella cheese
  • 1/2 cup sliced pepperoni or your favorite pizza meat
  • 1/4 cup finely chopped bell peppers (optional)
  • 1/4 cup sliced black olives (optional)
  • 1 teaspoon dried Italian seasoning (or a mix of oregano and basil)
  • 2 tablespoons grated Parmesan cheese
  • Cooking spray or a little olive oil for brushing

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. Lay one flour tortilla flat on a clean surface. Spread about 2-3 tablespoons of pizza sauce evenly over the tortilla, leaving about a 1/2-inch border around the edges.
  3. Sprinkle a generous handful of shredded mozzarella cheese over the sauce.
  4. Add your choice of toppings—pepperoni, bell peppers, olives, or whatever you love. Don’t overload, or the rolls will be hard to seal.
  5. Sprinkle a pinch of Italian seasoning and a little Parmesan cheese on top for extra flavor.
  6. Starting from one edge, carefully roll the tortilla tightly into a log shape, tucking in the edges as you go to keep the fillings inside.
  7. Place the roll seam-side down on the prepared baking sheet to help it stay closed.
  8. Repeat with remaining tortillas and fillings.
  9. Brush the tops of the rolls lightly with olive oil or cooking spray to help them crisp up beautifully.
  10. Bake in the preheated oven for 15-18 minutes, or until the tortillas are golden brown and the cheese inside is melted and bubbly.
  11. Remove from oven and let cool for a few minutes to firm up. Slice each roll into 1-inch thick pieces.
