Instructions
- Mash the boiled potatoes in a large bowl until smooth. Stir in the flour, salt, pepper, and garlic powder, mixing until a dough forms.
- Fold in the grated cheese, bacon, and green onions. Mama Lou always said this is where the magic happens, where each ingredient adds its own little story to the mix.
- Divide the dough into equal portions and shape each into a ball. Flatten them slightly to form discs.
- Heat vegetable oil in a large skillet over medium heat. Add a tablespoon of butter for extra flavor and richness.
- Dip each potato cake in the beaten egg, ensuring it’s fully coated, then place in the hot skillet.
- Cook each side for about 3-4 minutes or until golden brown. Remember to listen for that satisfying sizzle, just like the one Mama Lou would listen for as she cooked.
- Remove from the skillet and place on a paper towel-lined plate to drain excess oil.
Let them cool for a minute before diving in, allowing the flavors to meld together beautifully.
