- 2 cups fresh strawberries, hulled and sliced
- 1 large cucumber, thinly sliced
- 1/4 cup fresh mint leaves, chopped
- 2 tablespoons olive oil
- 1 tablespoon fresh lime juice
- 1 tablespoon honey
- Salt and pepper to taste
If you can’t find fresh mint, basil works as a lovely alternative. For a vegan version, you can substitute maple syrup for honey.
Instructions
- Start by washing the strawberries and cucumber thoroughly. Mama Lou always said, “A clean ingredient is a happy ingredient.”
- Hull and slice the strawberries, and then thinly slice the cucumber. Try to keep the slices uniform for even flavor distribution.
- In a small bowl, whisk together the olive oil, lime juice, and honey. Season with salt and pepper to taste.
- In a large bowl, combine the sliced strawberries, cucumber, and chopped mint leaves. Drizzle the dressing over the salad.
- Toss everything gently to coat the ingredients with the dressing. Be careful not to crush the strawberries.
- Let the salad sit for about 10 minutes before serving to allow the flavors to meld together.
