- 1 cup yellow cornmeal
- 1 cup all-purpose flour (or whole wheat flour for a nuttier flavor)
- 1/4 cup granulated sugar (adjust for sweetness)
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup buttermilk (or substitute with 1 cup milk + 1 tablespoon lemon juice, let sit for 5 minutes)
- 2 large eggs
- 1/4 cup unsalted butter, melted + extra for brushing
- 1/3 cup honey (local honey if you can get it—it makes all the difference!)
- 1 cup fresh or frozen corn kernels (thawed if frozen)
Mama Lou always emphasized the importance of fresh ingredients, especially when it came to honey. She swore by the honey from the little farm down the road, saying it held the spirit of the land. If you don’t have fresh corn on hand, frozen works just fine, but fresh corn kernels bring that extra burst of sweetness that makes these poppers truly special.
Instructions
- Preheat your oven to 375°F and grease a mini muffin tin generously with butter or non-stick spray. Mama Lou always said, “Never skimp on the butter—it’s what gives it that golden crust.”
- In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt until well combined.
- In a separate bowl, beat the eggs lightly, then add the buttermilk, melted butter, and honey. Stir until everything is smooth and well mixed.
- Pour the wet ingredients into the dry ingredients and gently fold together with a spatula. Be careful not to overmix; Mama Lou taught me that the batter should be just combined to keep the poppers tender.
- Fold in the corn kernels, distributing them evenly throughout the batter.
- Using a small spoon or cookie scoop, fill each mini muffin cup about 3/4 full with batter.
- Bake in the preheated oven for 12-15 minutes, or until the edges turn golden brown and a toothpick inserted in the center comes out clean.
- Remove from oven and immediately brush the tops with a little melted butter and an extra drizzle of honey for that glossy, sticky finish. This step is my sister Ouma’s favorite—she swears it’s what makes them irresistible!
- Let the poppers cool in the pan for 5 minutes before transferring to a wire rack to cool completely. Serve warm or at room temperature for the best flavor.
