  • 3/4 cup boiling water
  • 1 tablespoon vanilla extract
  • Optional: Vanilla ice cream or whipped cream for serving

Instructions

  1. Preheat your oven to 425°F (220°C). Grease a 9×13 inch baking dish and set aside.
  2. In a large bowl, combine the sliced peaches, 1/2 cup of granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Stir until the peaches are well coated. Allow the mixture to sit for about 10 minutes.
  3. Pour the peach mixture into the prepared baking dish, spreading it evenly. Place the dish in the preheated oven and bake for 10 minutes.
  4. Meanwhile, in a separate bowl, whisk together the flour, remaining 1/2 cup of granulated sugar, baking powder, and salt. Cut in the butter with a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  5. Add the boiling water and vanilla extract to the flour mixture, stirring until just combined. The dough will be thick and lumpy.
  6. Remove the baking dish from the oven and carefully drop spoonfuls of the dough over the hot peaches. Return the dish to the oven and bake for an additional 30 minutes, or until the topping is golden brown and the peaches are bubbly.
