- Salt and freshly ground black pepper, to taste
- 1/2 cup freshly grated Parmesan cheese (omit or substitute with nutritional yeast for vegan version)
- Fresh basil leaves, torn, for garnish
- Optional: 1 cup cooked chicken, shrimp, or sautéed mushrooms for added protein
When I first made this with Mama Lou, she insisted fresh basil was non-negotiable—“It’s what makes the dish sing,” she’d say. I’ve kept that tradition alive, always adding a handful at the end.
Instructions
- Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente, usually about 10-12 minutes. Drain and set aside, reserving 1/2 cup of pasta water.
- While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the minced garlic and chopped onion, sautéing gently until soft and fragrant, about 3-4 minutes. Mama Lou always reminded me to keep the garlic from browning—that bitterness can spoil the sauce.
- Pour in the crushed tomatoes, stirring to combine. Add the dried oregano and crushed red pepper flakes if using. Let the sauce simmer on low heat for 8-10 minutes, stirring occasionally to deepen the flavors.
- Slowly stir in the heavy cream or coconut milk, creating a creamy, luscious sauce. Adjust the seasoning with salt and freshly ground black pepper. This is where the sauce truly comes alive—smooth and comforting, just like Mama Lou’s touch.
- Add the cooked penne pasta to the skillet, tossing gently to coat every piece. If the sauce feels too thick, add reserved pasta water a tablespoon at a time until you reach your desired consistency. This little trick is one Ouma swears by when she wants her pasta silky and perfect.
- Sprinkle freshly grated Parmesan cheese over the pasta and stir until melted and well combined. Taste and adjust seasoning if needed.
- Remove from heat, garnish with torn fresh basil leaves, and serve immediately. Remember to keep some extra Parmesan on the side for those who want a little more indulgence.
