For substitutions, if you’re looking to lighten things up, you can swap half the sugar for coconut sugar or maple syrup, although the texture will change slightly. For a gluten-free version, almond flour makes a lovely substitute, though the bars will be a bit more delicate. And if you prefer a nut-free option, sunflower seed butter can stand in for peanut butter, bringing its own unique flavor twist.
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving a little overhang on the sides for easy removal later.
- In a large bowl, combine the peanut butter and sugar. Using a wooden spoon or electric mixer, cream them together until smooth and well blended, about 2-3 minutes.
- Beat in the egg and vanilla extract until the mixture is glossy and smooth. This step always reminds me of stirring the batter with Ouma, giggling as we tried not to get sticky fingers everywhere.
- Sprinkle in the baking soda and salt, stirring gently to combine.

- Press the dough evenly into the prepared pan. Use the back of a spoon or your fingers to smooth the surface.
- Bake for 15-18 minutes, or until the edges are golden and a toothpick inserted in the center comes out with just a few moist crumbs. The smell filling the kitchen here is always the best part.
- Allow the bars to cool completely in the pan before lifting them out with the parchment overhang. Cut into 12 squares and enjoy!
