Learn how to make delicious pasta recipe one pot. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

  • 12 ounces dry pasta (penne or fusilli work beautifully)
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 medium onion, finely chopped
  • 1 can (14.5 ounces) diced tomatoes, with juice
  • 3 cups vegetable or chicken broth
  • 1/2 teaspoon red pepper flakes (optional, for a little kick)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 cup fresh spinach, roughly chopped (substitute with kale or arugula if you prefer)
  • 1/2 cup grated Parmesan cheese, plus extra for serving
  • Salt and freshly ground black pepper to taste
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Heat the olive oil in a large, deep skillet or Dutch oven over medium heat. As the oil warms, I like to think about how Mama Lou would always encourage us to savor the moment before the stirring began.
  2. Add the chopped onion and sauté until translucent, about 4-5 minutes. Stir in the minced garlic and cook for another minute until fragrant, careful not to burn it.
  3. Pour in the diced tomatoes with their juice, the broth, red pepper flakes, oregano, and basil. Give everything a gentle stir to combine the flavors. This is where the dish starts to sing, just like Mama Lou’s kitchen on a Sunday afternoon.
  4. Add the dry pasta directly into the pot, spreading it evenly. Press down gently to make sure the pasta is mostly submerged in the liquid.
  5. Bring the mixture to a boil, then reduce the heat to a simmer. Cover with a lid slightly ajar and cook for about 12-15 minutes, stirring occasionally to prevent sticking. The pasta will soak up all that rich, herby broth, and that’s the magic moment I always look forward to.
  6. When the pasta is tender and most of the liquid has been absorbed, stir in the fresh spinach until wilted, about 2 minutes.
  7. Turn off the heat and mix in the grated Parmesan cheese. Season with salt and pepper to taste. I remember how Mama Lou would always add a pinch of love here—sometimes in the form of a secret herb or a sprinkle of extra cheese—and it made all the difference.
  8. Serve immediately, garnished with fresh basil leaves if you have them. Enjoy the comforting flavors alongside the warmth of family or friends.
