- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 cup fresh spinach, roughly chopped (substitute with kale or arugula if you prefer)
- 1/2 cup grated Parmesan cheese, plus extra for serving
- Salt and freshly ground black pepper to taste
- Fresh basil leaves for garnish (optional)
Instructions
- Heat the olive oil in a large, deep skillet or Dutch oven over medium heat. As the oil warms, I like to think about how Mama Lou would always encourage us to savor the moment before the stirring began.
- Add the chopped onion and sauté until translucent, about 4-5 minutes. Stir in the minced garlic and cook for another minute until fragrant, careful not to burn it.
- Pour in the diced tomatoes with their juice, the broth, red pepper flakes, oregano, and basil. Give everything a gentle stir to combine the flavors. This is where the dish starts to sing, just like Mama Lou’s kitchen on a Sunday afternoon.
- Add the dry pasta directly into the pot, spreading it evenly. Press down gently to make sure the pasta is mostly submerged in the liquid.
- Bring the mixture to a boil, then reduce the heat to a simmer. Cover with a lid slightly ajar and cook for about 12-15 minutes, stirring occasionally to prevent sticking. The pasta will soak up all that rich, herby broth, and that’s the magic moment I always look forward to.
- When the pasta is tender and most of the liquid has been absorbed, stir in the fresh spinach until wilted, about 2 minutes.
