If you’re short on eggs, you can substitute one egg with 2 tablespoons of water plus 1 tablespoon of olive oil, though the texture might be slightly different. Mama Lou often said that a little flexibility in the kitchen keeps the heart happy—and I’ve always held onto that advice.
Instructions
- Start by sifting the flour onto a clean surface, creating a mound. Make a well in the center wide enough to hold the eggs.
- Crack the eggs into the well, add salt and olive oil. Using a fork, gently whisk the eggs, gradually incorporating the flour from the edges.
- Once the mixture thickens, use your hands to start kneading the dough. Add a little water if it feels dry, but be careful not to overdo it.
- Knead for about 8-10 minutes until the dough becomes smooth and elastic. I like to think of this step as a little meditation—Mama Lou always said the dough tells you when it’s ready.
- Wrap the dough in plastic wrap and let it rest at room temperature for 30 minutes. This resting period relaxes the gluten and makes rolling easier.
- After resting, divide the dough into four pieces. On a floured surface, roll each piece out as thin as you can—about 1/16 inch thick is ideal.
- Dust the rolled dough lightly with flour, then fold it loosely into thirds. Using a sharp knife, cut into your desired noodle width—fettuccine or tagliatelle widths work beautifully.
- Unfold the noodles and toss them gently with a little flour to prevent sticking.
- Bring a large pot of salted water to a rolling boil. Fresh pasta cooks quickly—about 2-3 minutes. They’re done when they float to the surface and have a tender bite.
- Drain and serve immediately with your favorite sauce. Mama Lou’s favorite was a simple garlic, olive oil, and fresh parsley dressing—it lets the noodles shine.
