Instructions

  1. Bring a large pot of salted water to a boil. Add the elbow macaroni and cook until just al dente, about 7-8 minutes. Drain and set aside, reserving about 1 cup of pasta water.
  2. In a large saucepan over medium heat, melt the butter until bubbly. Sprinkle in the flour and whisk continuously for about 2 minutes to cook out the raw flour taste—this is the base of your roux.
  3. Slowly pour in the warmed milk and cream, whisking constantly to avoid lumps. Cook the mixture, stirring frequently, until it thickens enough to coat the back of a spoon—about 5-7 minutes.
  4. Lower the heat and stir in the Dijon mustard, garlic powder, salt, and pepper. Gradually add the cheddar, Gruyère, and Parmesan cheeses, stirring gently until melted and smooth. If the sauce feels too thick, add a splash of reserved pasta water to loosen it.
