  • 1/4 cup chopped fresh parsley (flat-leaf preferred)
  • Salt and freshly ground black pepper, to taste
  • 1/4 cup reserved pasta cooking water

Substitution tips: If you don’t have Parmesan, Pecorino Romano makes a great alternative with a bit more bite. For herbs, basil or chives can add a nice twist if parsley isn’t on hand. And if fresh lemons aren’t available, a tablespoon of high-quality bottled lemon juice can work in a pinch.

Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually about 8-10 minutes.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the sliced garlic and sauté gently until fragrant and golden, about 2-3 minutes. Be careful not to burn it — this step always reminds me of Mama Lou’s patience, gently coaxing the garlic to just the right shade of golden brown.
  3. Remove the skillet from heat. Stir in the lemon zest, lemon juice, and crushed red pepper flakes, if using. The aroma here is unforgettable—bright, warm, and inviting, just like a Sunday afternoon at Mama Lou’s house.
  4. Drain the pasta, reserving about 1/4 cup of the pasta water before draining.

  6. Stir in the grated Parmesan and chopped parsley. Season with salt and freshly ground black pepper to taste.
