Here’s what you’ll need to make a simple yet delicious homemade pasta:
- 2 cups all-purpose flour
- 3 large eggs
- 1/2 teaspoon salt
- 1 tablespoon olive oil
- 1 tablespoon water (if needed)
Feel free to experiment with different flours, such as semolina or whole wheat, to give your pasta a unique texture and flavor. Mama Lou often encouraged us to play with our food (in the best possible way), reminding us that cooking is as much about creativity as it is about following a recipe.
Instructions
Follow these steps to create your own homemade pasta:
- On a clean surface, make a mound with the flour, creating a well in the center. Crack the eggs into the well, add the salt and olive oil.
- Using a fork, beat the eggs gently, gradually incorporating the flour from the edges of the well. Continue until the mixture is too stiff to mix with a fork.
- Begin kneading the dough by hand, bringing it together into a ball. Add a small amount of water if the dough is too dry.
- Knead the dough for about 8-10 minutes, until it’s smooth and elastic. Mama Lou always said, “You’ll know when it’s ready, it just feels right,” and she was never wrong.
- Wrap the dough in plastic wrap and let it rest for at least 30 minutes. This is a perfect time to enjoy a cup of tea just like Mama Lou and I would, sharing stories and laughter.
- Once rested, divide the dough into four pieces. Roll each piece out on a lightly floured surface to your desired thickness using a pasta machine or a rolling pin.
- Cut the rolled dough into your preferred pasta shape. Ouma and I loved making fettuccine, its ribbons reminiscent of the joyous streamers at family celebrations.
- Cook the pasta in a large pot of salted boiling water for 2-4 minutes, until al dente. Drain and serve with your favorite sauce.
