Ingredients
To recreate this dish, you’ll need a handful of fresh ingredients, each playing a crucial role in the overall design of the meal. Just like Ouma’s penchant for bright colors in her art, these ingredients color the canvas of our pasta with vibrant flavors.
- 12 ounces of spaghetti or your preferred pasta
- 2 tablespoons of olive oil
- 3 cloves of garlic, minced
- 1/2 teaspoon red chili flakes (optional, for a hint of heat)
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh basil leaves, torn
- Salt and freshly ground black pepper to taste
- 1/4 cup grated Parmesan cheese (or nutritional yeast for a vegan option)
- Juice of half a lemon
Feel free to substitute ingredients based on your dietary needs. Whole wheat or gluten-free pasta works just as well, and if you’re not a fan of spicy dishes, simply omit the chili flakes.
Instructions
Cooking this dish is as much about the journey as it is about the destination. With each step, you’ll find yourself immersed in the sights, sounds, and aromas that make cooking such a joyful experience.
- Start by bringing a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente.
- While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the minced garlic and chili flakes, cooking until fragrant, about 1-2 minutes.
- Add the cherry tomatoes to the skillet and sauté for another 3-4 minutes, or until they begin to soften and release their juices.
- Drain the pasta, reserving about 1/2 cup of the pasta water. Add the pasta to the skillet along with the reserved water, tossing to combine.
- Stir in the fresh basil, season with salt and pepper, and remove the skillet from the heat.
- Finish by sprinkling the Parmesan cheese over the pasta and adding a squeeze of lemon juice for a bright, fresh note.
One of Mama Lou’s tips was to always taste as you go. Don’t be afraid to adjust the seasoning to suit your palate—after all, cooking is a personal experience!
