  • 12 oz of your favorite pasta (spaghetti, penne, or fusilli work well)
  • 2 tablespoons olive oil
  • 3 cloves of garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1/4 cup freshly grated Parmesan cheese
  • Fresh basil leaves for garnish
  • Optional: 1 cup cherry tomatoes, halved

Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain, reserving 1/2 cup of pasta water.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes, if using. Sauté for 1-2 minutes until the garlic is fragrant and golden, being careful not to burn it.
  3. Add the cooked pasta to the skillet, tossing to coat it in the garlic oil. If the pasta seems dry, add reserved pasta water, a tablespoon at a time, until desired consistency is reached.
  4. Season with salt and pepper to taste. Stir in cherry tomatoes if using, and cook for an additional 2-3 minutes until they’re slightly softened.
  5. Remove from heat and toss with freshly grated Parmesan cheese. Serve immediately, garnished with fresh basil leaves.
