- 12 oz of your favorite pasta (spaghetti, penne, or fusilli work well)
- 2 tablespoons olive oil
- 3 cloves of garlic, minced
- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- 1/4 cup freshly grated Parmesan cheese
- Fresh basil leaves for garnish
- Optional: 1 cup cherry tomatoes, halved
Instructions
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain, reserving 1/2 cup of pasta water.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes, if using. Sauté for 1-2 minutes until the garlic is fragrant and golden, being careful not to burn it.
- Add the cooked pasta to the skillet, tossing to coat it in the garlic oil. If the pasta seems dry, add reserved pasta water, a tablespoon at a time, until desired consistency is reached.
- Season with salt and pepper to taste. Stir in cherry tomatoes if using, and cook for an additional 2-3 minutes until they’re slightly softened.
- Remove from heat and toss with freshly grated Parmesan cheese. Serve immediately, garnished with fresh basil leaves.
