Ingredients
Picture a bustling Italian market; the vibrant colors and rich aromas. That’s the essence we aim to capture in our pasta dish. Here are the essentials:
- 200g of your favorite pasta (spaghetti, penne, or fusilli)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 400g can of diced tomatoes
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
For those looking to add a personal touch, consider these optional ingredients:
- 1 cup cooked chicken or shrimp
- 1/2 cup sliced mushrooms
- Fresh basil or parsley for garnish
When sourcing ingredients, I always hear Mama Lou’s voice reminding me, “Fresh is best, Sofia!” So, opt for fresh pasta if possible, or a high-quality dried variety if that’s more convenient.
Instructions
- Bring a large pot of salted water to a boil and add the pasta. Cook according to package instructions until al dente, about 8-10 minutes.
- Meanwhile, heat olive oil in a large skillet over medium heat. Add garlic and sauté until fragrant, about 1 minute.
- Add the diced tomatoes to the skillet, reduce heat, and let simmer for 10 minutes. Stir occasionally.
- Drain the pasta, reserving 1/2 cup of pasta water, and add the pasta to the skillet. Toss to combine, adding reserved water as needed to adjust consistency.
- Stir in Parmesan cheese and season with salt and pepper to taste. Serve hot, garnished with fresh basil or parsley.
As you cook, remember my sister Ouma’s advice: “Taste as you go, Sofia. It’s the secret to making it your own.” This ensures every bite is as delightful as you intended.
