  • 2 cups of chicken or vegetable broth
  • 1 teaspoon of paprika
  • 1 teaspoon of dried thyme
  • Salt and pepper to taste
  • 1 tablespoon of olive oil

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic, sautéing until the onion becomes translucent and fragrant, about 3-4 minutes.
  2. Add the ground beef or turkey to the pot, breaking it up with a spoon as it cooks. Cook until browned and no longer pink, approximately 5-7 minutes.
  3. Stir in the mixed vegetables and cook for another 5 minutes, allowing them to soften slightly.
  4. Add the diced tomatoes, rice, chicken or vegetable broth, paprika, and thyme. Stir everything together, ensuring the rice is submerged in the liquid.
  5. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for 20-25 minutes, or until the rice is cooked and has absorbed most of the liquid.
  6. Season with salt and pepper to taste. Serve hot, garnished with fresh herbs if desired. Enjoy the comforting flavors that remind you of home.
