  • 1/4 cup unsalted butter, melted (for brushing)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt (for topping)

Feel free to substitute whole wheat flour for a portion of the all-purpose flour if you’re looking to add a bit more fiber. You can also use olive oil instead of butter for a slightly different flavor profile that still honors the Italian roots of these breadsticks.

Instructions

  1. In a small bowl, dissolve the yeast and sugar in warm water. Let it sit for about 5 minutes, or until it becomes frothy. This step always reminds me of the science experiments Ouma and I would conduct in the kitchen, marveling at the process of yeast coming to life.
  2. In a large mixing bowl, combine the flour and salt. Add the yeast mixture and melted butter. Stir until the dough begins to come together.
  3. Knead the dough on a floured surface for about 7-10 minutes, until smooth and elastic. Kneading dough always brings me back to standing on a stool next to Mama Lou, my small hands working alongside hers.
  4. Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
  5. Preheat your oven to 400°F. Punch down the dough and divide it into 12 equal pieces. Shape each piece into a 7-inch long breadstick.
  6. Place the breadsticks on a parchment-lined baking sheet. Cover and let them rise again for about 15-20 minutes.
  7. Bake the breadsticks for 12-15 minutes, or until golden brown. The smell at this point is simply divine, a reminder of the cozy evenings spent in the warmth of family and love.
  8. While the breadsticks are baking, mix the melted butter, garlic powder, and salt. Brush this mixture over the breadsticks as soon as they come out of the oven.
