- 4 medium cucumbers, sliced thinly
- 1 large onion, sliced thinly
- 1 cup white vinegar
- 1/2 cup water
- 1/4 cup granulated sugar
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon red pepper flakes (optional for a bit of heat)
- Fresh dill for garnish (optional)
Feel free to substitute white vinegar with apple cider vinegar for a slightly sweeter taste. If you prefer a milder onion flavor, red onions can be used instead.
Instructions
- Start by preparing your cucumbers and onions. Slice them thinly, about 1/8 inch thick, and set them aside in a large bowl.
- In a saucepan, combine the vinegar, water, sugar, salt, black pepper, and red pepper flakes. Bring the mixture to a boil over medium heat, stirring until the sugar is completely dissolved.
- Remove the saucepan from the heat and let the mixture cool slightly. This step reminds me of the patience Mama Lou taught us, as good things often take time.
- Pour the warm vinegar mixture over the sliced cucumbers and onions. Toss gently to ensure everything is evenly coated.
- Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or overnight for the best flavor infusion.
- When ready to serve, give it a gentle toss and garnish with fresh dill if desired.
