Instructions

  1. In a medium saucepan, combine the butterscotch chips, sweetened condensed milk, and softened butter over low heat.
  2. Stir continuously with a wooden spoon or heat-proof spatula to prevent burning. The mixture should become smooth and glossy within 5-7 minutes.
  3. Remove the pan from heat and stir in the vanilla extract and sea salt. This step always reminds me of Mama Lou’s gentle hands adding a pinch of salt “to bring out the magic.”
  4. Let the mixture cool for about 5 minutes, just enough so it thickens slightly but is still malleable.
  5. Fold in the crushed graham crackers and chopped nuts (if using). This adds a lovely texture that my sister Ouma and I always adored—something to contrast the creamy butterscotch.
  6. Line a baking sheet or tray with parchment paper. Using a small spoon or your fingers, drop small mounds (about 1 tablespoon each) of the mixture onto the parchment, shaping them into rounds.
